Everyone raved about Evelyn Rapetti's Banana Bran Muffins she brought to the August meeting, so she has graciously provided the recipe. So, here’s to healthy, delicious eating –

BANANA BRAN MUFFINS

1 cup all-purpose flour
3 tablespoons sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup whole bran (Unprocessed wheat bran)
1 well-beaten egg
1 cup mashed ripe banana
1/4 cup milk
1 tablespoons salad oil

Stir together flour, sugar, baking powder, and salt.  Stir in bran.  Mix remaining ingredients; add all at once to flour mixture, stirring just to moisten.  Fill greased muffin pans 2/3 full.  Bake at 400 degrees for 20-25 minutes.  Makes about 10 muffins. 


Members welcomed Peggy M. Hodgson MA, CCC, from Shamrock Speech Therapy Services, Inc. She discussed the Lee Silverman Voice Treatment (LSVT) theraphy that is proving to be successful for Parkinson's patience.  She also shared Communication Strategies that also help:

  • Always start each sentence, word, phrase, etc. by taking a breath in.
  • Break up longer sentences into smaller parts to make them easier to say without losing your voice
  • Take more breaths per sentence to ensure youhave adequate volume for speech
  •  SLOW DOWN !!
  • Exaggerate the movements of your mouth when producing words to help enhance the quality of your speech.  
     

Guest speaker at the July 5 meeting was Cindy DeLuz.  She is an artist who was diagnosed with PD in 2007 at the age of 47. After time, she says, “I eventually learned how to make lemonade. Nowadays PD is a small piece of my 'life pie' and pity parties are far and few between.”
